Ingredients

(for “Fukkura-san”)


(Dipping Sauce)

400 ml  dashi stock

2 tablespoons  sake

100 ml  mirin

100 ml  soy sauce


Somen noodles


Your choise of condiments (“yakumi”), such as grated ginger, sliced shiso, grated sesame seeds, shredded nori seaweed, sliced scallions, wasabi paste, kama-age shirasu (steamed baby fish), mitsuba, etc.



Procedure

  1. 1.Fill both the skillet and lid (upside down) of Fukkura-san with water so that they can soak the moisture. 

  2. 2.To make the dipping sauce, in a sauce pan, heat the dashi stock over medium-high.  Add the sake, mirin, and soy sauce.

  3. 3.As soon as the mixture starts boiling, remove from the heat.  Chill.

  4. 4.Cook the somen noodles according to the package’s instructions.  Cool down with the running cold water and drain.

  5. 5.Get your choices of condiments ready.

  6. 6.Drain the water from Fukkura-san’s skillet and lid.  Spread the ice cubes in the skillet and arrange the noodles over the ice.  Close with the lid.  *With the effect of the “heat” of vaporization, inside of Fukkura-san can become very cold like a refrigerator.

  7. 7.Pour the dipping sauce in small individual bowls.  Dip a small amount of the noodles with condiments into the sauce and eat immediately.  Repeat it until the noodles are gone!  Add more sauce to the bowl as necessary.
