Ingredients
(for large size “Fukkura-san”)
Your choice of ingredients for smoking, such as chicken drummettes, sausage, fish, asparagus, shrimp, etc.
(for smoking)
A handful of your choice of smoke chips, such as hickory, cedar, maple, cherry, etc.
1 tablespoon of course brown sugar.
Procedure

1.Season the ingredients with salt and pepper. You can also use herbs. *For meat, I like to season and let rest in the fridge overnight for the better flavor and density.

2.Line the skillet of Fukkura-san with the aluminum foil and spread the smoked chips and brown sugar. Set the grate over the chips. *Depending on the variety/ brand of smoke chips, pre-soaking of the chips with water might be required. Please refer to the package instructions or inquire the vendor of the smoke chips.

3.Heat the skillet over high heat until the smoke chips starts to char and smell smoky (about 5 minutes). Place your choice of ingredients on the grate and close with the lid.

4.Turn the heat to low. Cook for 30-45 minutes. Let it rest covered for 20-30 minutes.

5.Serve as is, or with lemon/ lime wedges.
