Ingredients

1.5 tablespoon sesame oil

1 lb. sukiyaki-slice pork

1 medium-size onion, thinly sliced

1/2 lb. konnyaku shirataki (devil's yam jelly noodle)

1/3 lb. shiitake mushrooms, sliced

2 to 3 tablespoons ginger, cut into shreds

3/4 cup dashi stock

1/3 cup sake

1/3 cup soy sauce


Chopped chives

sansho pepper

Fresh eggs for dipping, optional



Procedure

  1. 1.Heat the sesame oil in Fukkura-san’s skillet over medium to medium-high heat.

  2. 2.Sauté the onion for a couple of minutes. Add the pork and continue to sauté until the meat is almost cooked through. (Pictures below)

  3. 3.Add the konnyaku, shiitake, and ginger and sauté another couple of minutes.

  4. 4.Combine dashi stock, sake and soy sauce, and pour this mixture over the pan.

  5. 5.Cover with the lid and cook for 7-8 minutes.

  6. 6.Open the lid and stir gently all the ingredients again.  Cover, turn off the heat, and let it sit for about 3 minutes.

  7. 7.Enjoy with your choice of condiments. I like dipping the meat in the raw egg.
