Ingredients

(for large size “Fukkura-san”)


(hamburg)

1 pound  ground kurobuta pork

1 egg

2 tablespoons  panko breadcrumbs

2 tablespoons  sake

1 tablespoon  grated ginger

1 clove  garlic, minced

1/2  onion, minced

salt and pepper to taste


(sauce mixture)

1 cup  grated daikon radish, lightly drained

1/4 cup  dashi stock

2 tablespoons  black vinegar

3 tablespoons  soy sauce

1 tablespoon  sake

1 tablespoon  mirin

a pinch of sugar

1 tablespoon  grated ginger

1 teaspoon  kuzuko (arrowroot powder) or katakuriko (potato starch)


1 tablespoon  sesame oil


Procedure

  1. 1.In a bowl, combine the ingredients for the hamburg and mix well by hand.  Cover and let it rest in the fridge for 30 minutes.

  2. 2.Meanwhile, in a bowl, combine the ingredients for the sauce and set aside.

  3. 3.Form the meat mixture into 4-5 patties by hand.

  4. 4.Set the skillet of Fukkura-san over medium-high heat.

  5. 5.Heat the sesame oil and sear one side of patties until brownd (about 3-4 minutes).

  6. 6.Turn the patties over, and add the sauce mixture (stir the mixture well before adding).

  7. 7.Cover with the lid and cook for 6-7 minutes or until the meat is cooked through.

  1. Ingredients for the meat mixture are first mixed in a bowl.

  1. The pork patties are seared.
