Ingredients
3-4 slices salmon filet
salt and pepper
2 tablespoons sesame oil
2 cloves garlic, sliced
4-5 slices cabbage
1/3 – 1/2 pounds shiitake mushrooms, sliced if too big
1.5 – 2 oz. carrots, julienned
6-8 cherry tomatoes, halved
2 tablespoons sake
(Sauce)
3 tablespoons black vinegar
2 tablespoons soy sauce
1 teaspoon sugar
Procedure

1.Lightly sprinkle the salmon filets with salt and pepper to season and set aside for about 15 minutes.

2.Heat the sesame oil in the skillet of Fukkura-san over medium to medium-high heat.

3.Sauté the garlic until aromatic. Add the cabbage and shiitake mushrooms and sauté together.

4.On top of the vegetables, spread the carrot, salmon filets, and cherry tomatoes.

5.Sprinkle the sake, cover with the lid, and cook the ingredients over medium to medium-high heat for 5 minutes of until the salmon is almost done.

6.Meanwhile, blend the ingredients for the sauce.

7.Open the lid and drizzle the sauce mixture over the fish. Cover again and let it cook for another couple of minutes.

8.Turn off the heat and let it rest (with the cover-on) for 3-5 minutes.
