Ingredients
2 tablespoons sesame oil
2 cloves garlic, sliced
1 pound, boneless chicken thighs (preferably skin on), cut into 2-inch pieces
Half bunch (about ½ lb) asparagus, trimmed and cut into half
8-10 cherry tomatoes
2 tablespoons sake
Salt and Pepper
Chopped chives
Lemon wedges
Procedure

1.Lightly sprinkle the chicken thighs with salt and pepper to season and set aside for 15-30 minutes.

2.Heat the sesame oil in the skillet of Fukkura-san over medium to medium-high heat.

3.Sear the chicken, skin-side first, until golden, then turn over.

4.Add the garlic and sauté until aromatic (picture below). Add the asparagus and cherry tomatoes. Sprinkle the sake over the ingredients. Season with a little amount of salt and pepper.

5.Close the lid and let the ingredients cook over medium to medium-high heat for about 5 minutes.

6.Open the lid, and toss all the ingredients.

7.Close the lid, turn off the heat, and let it steam for about 5 minutes.

8.Garnish with the chives, then squeeze the lemon over the cooked ingredients.
*Optional: Serve with your choice of condiments, such as yuzu-kosho.
