Ingredients

2 tablespoons  sesame oil

2 cloves  garlic, sliced

1 pound, boneless chicken thighs (preferably skin on), cut into 2-inch pieces

Half bunch (about ½ lb) asparagus, trimmed and cut into half

8-10  cherry tomatoes

2 tablespoons  sake

Salt and Pepper

Chopped chives

Lemon wedges


Procedure

  1. 1.Lightly sprinkle the chicken thighs with salt and pepper to season and set aside for 15-30 minutes.

  2. 2.Heat the sesame oil in the skillet of Fukkura-san over medium to medium-high heat.

  3. 3.Sear the chicken, skin-side first, until golden, then turn over.

  4. 4.Add the garlic and sauté until aromatic (picture below).  Add the asparagus and cherry tomatoes.  Sprinkle the sake over the ingredients.  Season with a little amount of salt and pepper.

  5. 5.Close the lid and let the ingredients cook over medium to medium-high heat for about 5 minutes.

  6. 6.Open the lid, and toss all the ingredients.

  7. 7.Close the lid, turn off the heat, and let it steam for about 5 minutes.

  8. 8.Garnish with the chives, then squeeze the lemon over the cooked ingredients.


*Optional: Serve with your choice of condiments, such as yuzu-kosho.
