Ingredients (makes about 3 cups)
1.5 cups dashi stock
2 tablespoons sake
6 tablespoons mirin
6 tablespoons soy sauce
2/3 cup to 3/4 cup yuzu juice (100%)
*You can substitute the yuzu juice with lemon juice or your choice of citrus/ vinegar. I sometimes blend different types of citrus for this sauce.
Procedures
1.In a pot, combine dashi stock, sake, mirin, and soy sauce and cook over medium-heat.
2.Once the mixture starts to boil, turn off the heat and combine the yuzu juice.
